Tailgate Tips

Kristie from @happyhostesscollective put together her tips for a great day of tailgating!

  1. Make a packing list and double check that you have everything. Nothing is more frustrating than realizing you left the trash bags at home or realize you don’t have any paper towels.
  2. Get there early and have a marker like a flag or balloon that helps your friends find you in the parking lot.
  3. Don’t forget the entertainment. Tailgating can last for hours, so make sure you have music player, a football for tossing and lawn games like corn hole.
  4. Make sure you time your grilling to be finished early enough for the grill to cool down before the game starts. Bring a metal bucket for any hot coals. Never put a hot grill in your vehicle.
  5. Bring an empty plastic tub for any dirty dishes to make for a quick clean up.

Queso Dip with Collard Greens & Sausage

Stacey from @southerndiscourse shared a yummy recipe for Queso Dip with Collard Greens & Sausage

Give your regular queso dip a little southern flair with shredded collard greens and spicy ground sausage!  It's a hearty crock pot dip that everyone will love!

Ingredients

  • 4 C shredded fresh collards greens
  • 1 C whole milk
  • 16 oz Velveeta cubed
  • 8 oz cream cheese
  • 1 lb ground sausage browned
  • 10 oz can of diced tomatoes & green chiles

Instructions

  • To prep, brown the ground sausage and drain off any fat.  Rough chop the shredded collard greens.
  • Add all ingredients to the crock pot and cook until melted and creamy.  Stir occasionally after cheeses begin to melt to mix ingredients and help the cheeses further melt.

If collard greens aren't your thing, try baby spinach instead!
